Chef John Manion, in collaboration with Chef Steve Domanik & Team BABYGOLD, are curating a killer menu for the evening. And not just any musical performance. You’ll hear an intimate set from acclaimed singer-songwriter Gia Margaret. “Every part of Singing feels unique, meticulously handcrafted, and full of radiant hope for the future.” (Clash magazine). Both will also share with host Mark Bazer a bit about their work and their lives. All supported by FitzGerald’s amazing team. John Manion Chef John Manion is a culinary leader whose restaurants reflect a genuine passion for live-fire cooking and South American flavors. Multiple nominations for “Chef of the Year” culminated most recently in a win at Chicago’s Jean Banchet Awards. Long before Chicago’s West Loop became a sure thing, Chef Manion opened La Sirena Clandestina in 2012. The neighborhood darling maintained a cult following for nearly a decade. A few years later, he opened El Che Steakhouse & Bar in 2016. Inspired by Argentine live-fire cooking traditions, the restaurant continues to define the modern Chicago steakhouse. In 2024, Chef Manion opened the bold, wood-fired Latin-inspired restaurant Brasero in Chicago’s West Town. The innovative concept reflects the chef’s boyhood memories of living in São Paulo and extensive travels throughout South America.  Gia Margaret Every artist has to discover their voice. Gia Margaret didn’t find herself until she lost hers. With a vocal injury that kept her from singing for years, she developed other musical languages, mastering the grammar of an intricate, homey form of ambient music. The two largely instrumental albums the Chicago pianist and composer made at that time—2020’s Mia Gargaret and 2023’s Romantic Piano—allowed her to lose herself in the emotional possibilities of pure sound. Now, her physical voice healed and her artistic voice honed, she comes full circle with Singing, her first vocal album since 2018’s There’s Always Glimmer. Led by soft piano lines that fall like breath on glass, the music on Singing evidences the same jeweler’s sensitivity to detail that she developed in her silence.  Mark Bazer is the host and creator of the long-running live talk show “The Interview Show With Mark Bazer.” Held at both FitzGerald’s and The Hideout, the show began in 2008.
